  • 1 cup mango slices (or cantaloupe cubes, orange segments)
  • 1 cup pineapple chunks (or yellow bell pepper strips, golden kiwi slices)
  • 1 cup green apple slices, tossed in lemon juice (or green grapes, honeydew melon)
  • 1 cup blueberries (or blackberries, purple grapes, dried figs)
  • 4 oz brie or goat cheese (soft cheese)
  • 4 oz sharp cheddar or gouda (semi-hard cheese)
  • 4 oz aged manchego or parmesan (hard cheese)
  • 1 cup crackers or crostini
  • ½ cup almonds, walnuts, or pecans
  • ¼ cup dried apricots or figs
  • Honey for drizzling (optional)
  • Dark chocolate chips (optional)

Instructions

  1. Wash and dry all fruit thoroughly. Pat completely dry with paper towels.
  2. Slice fruit: halve strawberries lengthwise, cut mango into thin strips or cubes, slice green apples into thin wedges and toss in lemon juice. Leave grapes and blueberries whole. Cut pineapple into bite-sized chunks.
  3. Prepare cheese: slice hard cheeses into thin triangles or cubes. Leave soft cheeses like brie whole or cut into wedges. Roll goat cheese into small balls or leave in a log.
  4. Arrange the rainbow: start at top left of board and work down in color order—red, orange, yellow, green, blue/purple. Leave small gaps between color bands.
  5. Add cheese: tuck cheese pieces into gaps between fruit colors. Place soft cheese near center for easy access.
  6. Fill in with extras: add small bowls of nuts, dried fruit, or dips in corners. Scatter crackers around edges, overlapping slightly.
  7. Final touches: drizzle honey over brie or goat cheese if using. Sprinkle fresh herbs like mint or basil on top for color.

Assemble board no more than 30 minutes before serving to keep fruit crisp and crackers crunchy. Don’t stack fruit too high or it will slide.
