A bright and fresh winter salad featuring paper-thin shaved Brussels sprouts, sweet pomegranate arils, crunchy toasted almonds, and shaved Parmesan, all tossed in a simple lemon-Dijon dressing. It’s quick, easy, and perfect for holiday gatherings or cozy weeknight dinners.

Ingredients

Scale
  • 1 pound Brussels sprouts (about 4 cups shaved)
  • 1 cup pomegranate arils (from about 1 large pomegranate)
  • ½ cup slivered almonds, toasted
  • ⅓ cup shaved Parmesan cheese
  • ¼ cup fresh parsley, chopped
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • ½ teaspoon fine sea salt
  • ¼ teaspoon freshly ground black pepper
  • Optional: ¼ cup dried cranberries

Instructions

  1. Rinse Brussels sprouts under cold water and pat dry. Trim off the tough stem end (about ¼ inch) and remove any yellow or damaged outer leaves.
  2. Using a mandoline set to ⅛ inch thickness, carefully shave each sprout. Alternatively, cut each sprout in half lengthwise and slice crosswise as thin as possible with a sharp chef’s knife.
  3. Place shaved sprouts in a large bowl and separate any clumps with your fingers.
  4. In a small bowl or jar, combine olive oil, lemon juice, honey, Dijon mustard, salt, and pepper. Whisk vigorously until emulsified.
  5. Pour about two-thirds of the dressing over the shaved sprouts and toss well. Let sit for 5 minutes to soften.
  6. While sprouts rest, toast almonds in a dry skillet over medium heat, stirring frequently, until golden and fragrant (about 3-4 minutes).
  7. Add pomegranate arils, toasted almonds, shaved Parmesan, and chopped parsley to the dressed sprouts. Toss gently to combine.
  8. Adjust seasoning with additional dressing, salt, and pepper if needed.
  9. Serve immediately or let rest for 15-30 minutes at room temperature for best flavor.

Notes

Don’t skip the resting step after dressing—it softens the sprouts perfectly. Toast nuts fresh for best flavor. For make-ahead, store dressing separately and add nuts and cheese just before serving. The salad keeps well in the fridge for up to 3 days.
