Ingredients

Scale
  • 1 ½ pounds fresh green beans, trimmed and cut into 2-inch pieces
  • 1 tablespoon salt, for blanching water
  • Ice water bath
  • 4 tablespoons unsalted butter
  • 8 ounces cremini mushrooms, thinly sliced
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • ¼ cup all-purpose flour
  • 2 cups whole milk, warmed
  • 1 cup low-sodium chicken or vegetable broth
  • 1 teaspoon kosher salt, plus more to taste
  • ½ teaspoon black pepper
  • ¼ teaspoon nutmeg, freshly grated if possible
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
  • ½ cup sour cream, at room temperature
  • 1 ½ cups crispy fried onions
  • ½ cup panko breadcrumbs
  • 2 tablespoons melted butter
  • ¼ cup grated Parmesan cheese (optional)

Instructions

  1. Fill a large pot with water and bring to a rolling boil over high heat. Add 1 tablespoon of salt. Drop in the trimmed green beans and cook for exactly 2 minutes. While they boil, prepare an ice water bath in a large bowl. Use a slotted spoon or tongs to transfer the beans immediately into the ice bath. Let them sit for 2 minutes, then drain well and pat dry with a clean kitchen towel. Set aside.
  2. In a large skillet, melt 4 tablespoons of butter over medium-high heat. Add the sliced mushrooms and diced onion. Cook for 6-8 minutes, stirring occasionally, until the mushrooms have released their liquid and started to brown. Add the minced garlic and cook for 30 seconds until fragrant.
  3. Sprinkle the flour over the mushroom mixture and stir constantly for 1 minute. Slowly pour in the warmed milk while whisking to prevent lumps. Add the broth and keep whisking. Bring the mixture to a gentle simmer and cook for 3-4 minutes until it thickens enough to coat the back of a spoon. Stir in the salt, pepper, nutmeg, and fresh thyme. Remove from heat and let cool for 2 minutes, then stir in the sour cream until smooth.
  4. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or cooking spray. Spread the blanched green beans evenly in the dish. Pour the mushroom sauce over the top, using a spatula to coat every bean. Give the dish a gentle shake to settle everything.
  5. In a small bowl, combine the crispy fried onions, panko breadcrumbs, melted butter, and Parmesan cheese if using. Toss until evenly coated. Sprinkle this mixture evenly over the casserole without pressing it down.
  6. Place the casserole on the middle rack of the preheated oven. Bake for 20-25 minutes until the topping is golden brown and the sauce is bubbling around the edges. If the top browns too quickly, tent loosely with foil for the last 5 minutes. Let rest for 5 minutes before serving.

Notes

For best results, don’t skip the ice water bath—it keeps the beans crisp. Don’t rush the mushroom step; let them brown deeply for richer flavor. Always warm your milk before adding to avoid lumps. You can prep this casserole a day ahead: assemble without topping, cover, and refrigerate. Add topping and bake, adding 10 minutes to the cooking time. For gluten-free, use a gluten-free flour blend and gluten-free breadcrumbs. For dairy-free, use olive oil, unsweetened almond milk, and dairy-free sour cream.
