  • 68 Italian hoagie rolls or French rolls

Instructions

  1. Pat the beef chuck roast dry with paper towels. Season generously all over with dried Italian herbs, onion powder, salt, and pepper.
  2. Heat olive oil in a Dutch oven or skillet over medium-high heat. Sear the roast for 4-5 minutes on each side until well browned. Transfer to slow cooker if using.
  3. Mince garlic cloves and scatter around the roast. Pour in beef broth and Worcestershire sauce, ensuring liquid comes halfway up the sides of the meat.
  4. Slow roast the beef: In the oven, cover and roast at 275°F (135°C) for 4-5 hours until fork-tender. In a slow cooker, cover and cook on low for 7-8 hours or on high for 4-5 hours until shreddable.
