These spooky black cat sugar cookies are forgiving, fun, and genuinely delicious. Made with black cocoa powder for a deep, dark color and Oreo-like flavor, they require no royal icing and are perfect for Halloween parties.

Ingredients

Scale
  • 1 cup (226g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1 large egg, at room temperature
  • 2 teaspoons (10ml) vanilla extract
  • 2 ½ cups (312g) all-purpose flour
  • ¼ cup (25g) black cocoa powder
  • 1 teaspoon (4g) baking powder
  • ½ teaspoon (3g) salt
  • Candy eyes, for decorating
  • Black licorice strings or black writing gel, for whiskers
  • Orange sprinkles or candy pumpkins, for decoration

Instructions

  1. Cream the butter and sugar: In the bowl of a stand mixer fitted with the paddle attachment, beat the softened butter and granulated sugar together on medium speed for 3-4 minutes until light, fluffy, and pale. Scrape down the sides and bottom of the bowl at least once.
  2. Add the egg and vanilla: Add the room-temperature egg and vanilla extract. Beat on medium speed until fully combined, about 30 seconds. The mixture might look slightly curdled—that’s fine.
  3. Whisk the dry ingredients: In a separate medium bowl, whisk together the all-purpose flour, black cocoa powder, baking powder, and salt until evenly distributed.
  4. Combine wet and dry: With the mixer on low speed, gradually add the dry ingredients to the wet ingredients. Mix until just combined—a few streaks of flour should remain. Do not overmix.
  5. Chill the dough: Divide the dough in half, flatten each half into a 1-inch thick disk, and wrap tightly in plastic wrap. Refrigerate for at least 2 hours, or up to 3 days.
  6. Preheat and prepare: When ready to bake, preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  7. Roll out the dough: Place one disk of chilled dough between two sheets of parchment paper. Roll to an even ¼-inch thickness. If the dough cracks at the edges, let it sit at room temperature for 5 minutes.
  8. Cut the cookies: Use a cat-shaped cookie cutter to cut out as many cookies as possible. Press straight down—do not twist. Transfer cut cookies to prepared baking sheets, spacing them about 2 inches apart.
  9. Bake: Bake for 8-10 minutes, rotating the baking sheet halfway through. Cookies are done when edges are set and tops look slightly dry. Let cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  10. Decorate: Once cookies are completely cool, attach candy eyes with a tiny dab of royal icing or melted white chocolate. Pipe whiskers using black writing gel, and add orange sprinkles or candy pumpkins for a festive touch.

Notes

Chilling the dough is non-negotiable for preventing spreading. For best results, freeze cut-out cookies for 10-15 minutes before baking. The black cocoa powder makes it hard to judge doneness by color—set a timer for 8 minutes and check. The dough can be made ahead and refrigerated for up to 3 days or frozen for up to 3 months.
