Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. Whisk together dry ingredients: all-purpose flour, baking powder, baking soda, and salt in a medium bowl.
  3. Cream the butter and sugars using a mixer on medium speed until light and fluffy, about 3 minutes.
  4. Beat in eggs one at a time, then add vanilla extract until smooth and glossy.
  5. Gradually add the flour mixture to the wet ingredients, mixing on low speed or folding gently until just combined.
  6. Gently fold in diced fresh strawberries, being careful not to mash them.
  7. Scoop dough onto baking sheets using a cookie scoop or tablespoon, spacing about 2 inches apart.
  8. Optionally, sprinkle granulated or coarse sugar on top for a subtle crunch.
  9. Bake for 12-14 minutes until edges are lightly golden but centers remain soft.

Notes

Do not overmix the dough after adding flour to keep cookies tender. Use fresh, firm strawberries diced small to avoid soggy dough. If using frozen strawberries, thaw, drain, and pat dry.
