  • ¼ teaspoon freshly cracked black pepper

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Clean the pumpkin seeds: separate them from the stringy pulp, rinse in a colander under cold water, and rub gently to remove stubborn bits.
  3. Dry the seeds thoroughly: spread them on a clean kitchen towel or paper towels and pat dry. Let them air-dry for 10 minutes.
  4. In a medium mixing bowl, combine the dried seeds with olive oil, smoked paprika, garlic powder, cayenne, salt, and black pepper. Stir until every seed is evenly coated.
  5. Line a baking sheet with parchment paper. Spread the seeds in a single, even layer.
  6. Roast for 20-25 minutes, stirring halfway through (around the 12-minute mark) with a spatula.
  7. Check for doneness at 20 minutes: let a seed cool for 10 seconds and taste. It should be crunchy all the way through. If still chewy, roast for another 3-5 minutes.
  8. Transfer the seeds to a plate or wide bowl and spread them out. Let them cool completely for at least 10 minutes before serving.

Notes

Dry the seeds thoroughly to ensure crispiness. Don’t walk away during the last 5 minutes of roasting as seeds can burn quickly. For extra flavor, season while warm (not hot) with additional salt or spices. Store in an airtight container at room temperature for up to 2 weeks.
