Small Batch Habanero Mango Hot Sauce

A quick and easy small batch habanero mango hot sauce that balances sweet, tangy, and spicy flavors. Perfect for tacos, eggs, and more, this sauce comes together in about 30 minutes with simple ingredients.

  • 2 ripe mangoes, peeled and diced
  • 2 to 3 habanero peppers, stems removed
  • 1/2 small yellow onion, roughly chopped
  • 2 cloves garlic, smashed
  • 1/3 cup apple cider vinegar
  • 1/4 cup fresh lime juice
  • 1/4 cup water
  • 1/2 teaspoon fine sea salt
  • 1 teaspoon honey or agave (optional, if mangoes are tart)

Instructions

  1. Prep your ingredients. Put on gloves. Dice mangoes into 1-inch cubes. Chop onion into similar-sized pieces. Smash and roughly chop garlic. Remove stems from habaneros; for less heat, remove seeds and white pith.
  2. Sear the mango and onion. Heat saucepan over medium-high heat with a splash of oil. Add mango and onion in a single layer. Let sit undisturbed for 2 minutes until edges brown. Stir and cook another minute.
  3. Add garlic and habaneros. Toss in garlic and whole habaneros. Stir constantly for 30 seconds until fragrant. Turn on exhaust fan or open window.
  4. Add liquids. Pour in apple cider vinegar, lime juice, and water. Stir, scraping up browned bits from pan bottom.
  5. Simmer. Bring to a gentle boil, then reduce heat to low. Simmer uncovered for 10-12 minutes until mango is soft and liquid reduces slightly. Add water if pan looks dry.
  6. Cool slightly. Remove from heat and let cool for 5 minutes.
  7. Blend until smooth. Transfer to blender. Start on low, increase to high. Blend 45-60 seconds until smooth. Add water 1 tablespoon at a time if too thick.
  8. Taste and adjust. If too spicy, add honey or lime juice. If too sweet, add salt. If too thick, add water.
  9. Strain (optional). Pour through fine-mesh strainer for ultra-smooth sauce. Skip for more texture.
  10. Bottle and store. Pour into sterilized jar. Cool completely before sealing. Refrigerate.

Notes

Wear gloves when handling habaneros. For milder sauce, use 1 pepper and remove seeds. For smokier flavor, roast habaneros and onion under broiler for 5 minutes before cooking. Sauce keeps up to 3 weeks in refrigerator. Can be frozen in ice cube trays for longer storage.
