Simple Coconut Lime Popsicles

A refreshing and easy-to-make summer treat using just three ingredients: creamy coconut milk, fresh lime juice, and honey for natural sweetness.

  • 1 can (13.5 oz or 400 ml) full-fat coconut milk
  • ½ cup (120 ml) fresh lime juice (about 45 limes)
  • 3 tablespoons (60 ml) honey

Instructions

  1. Roll limes firmly on the counter, cut, and juice until you have about ½ cup (120 ml) of fresh lime juice. Strain if desired.
  2. Pour 1 can (13.5 oz or 400 ml) of full-fat coconut milk into a blender.
  3. Add 3 tablespoons (60 ml) of honey to the blender.
  4. Blend on medium speed for about 30 seconds until the mixture is smooth and honey is fully incorporated.
  5. Taste and adjust sweetness by adding more honey or lime juice if desired.
  6. Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
  7. Insert sticks and freeze for at least 6 hours or overnight without moving the molds.
  8. To unmold, run warm water briefly over the outside of the molds for 20-30 seconds and gently pull out the popsicles.

Notes

Use full-fat coconut milk for the creamiest texture. Fresh lime juice is essential for the best flavor. Adjust honey sweetness gradually as freezing mutes sweetness. To unmold easily, run warm water over molds briefly. Variations include adding fresh berries or mint for extra flavor. Store popsicles in an airtight container for up to 2 weeks.
