These Quick Mini Chicken Caesar Wraps are a kid-friendly, easy-to-make lunchbox favorite featuring cooked chicken, crisp romaine, and creamy Caesar dressing wrapped in mini tortillas.

  • 1 cup cooked chicken breast, shredded or chopped (about 5 oz)
  • 6 mini flour tortillas (6-inch)
  • 1 cup romaine lettuce, chopped (about 1 oz)
  • 3 tablespoons Caesar dressing
  • 2 tablespoons Parmesan cheese, grated
  • Crushed croutons (optional)
  • Fresh lemon juice (optional)
  • Freshly ground black pepper to taste

Instructions

  1. Chop about 1 cup of romaine lettuce into bite-sized pieces. Shred or chop 1 cup of cooked chicken breast into small strips or chunks. Grate 2 tablespoons of Parmesan cheese.
  2. In a medium bowl, combine the chicken, lettuce, and Parmesan. Add 3 tablespoons of Caesar dressing and toss gently until everything is coated evenly but not soggy. Optionally add a small squeeze of fresh lemon juice and a pinch of black pepper.
  3. Lay out 6 mini flour tortillas on a clean surface. Warm tortillas briefly in the microwave for about 10 seconds or on a dry skillet for 15 seconds each side if needed to make them pliable.
  4. Divide the chicken mixture evenly among the tortillas, placing it about 1 inch from one edge. Optionally sprinkle crushed croutons on top.
  5. Roll each tortilla tightly, tucking in the sides to prevent filling from falling out. Slice each wrap in half diagonally to make mini portions.
  6. Place the mini wraps in an airtight container or lunchbox. Keep a small ice pack nearby if packing ahead to keep fresh.

Notes

Use cooled chicken to prevent soggy wraps. Dry lettuce thoroughly. Warm tortillas briefly to avoid cracking. Pack dressing separately if making ahead to keep wraps fresh. Avoid overloading wraps to maintain structure.
