Quick Garlic Butter Steak Bites with Mushrooms

A quick and easy recipe featuring tender steak bites and sautéed mushrooms in a rich garlic butter sauce, perfect for busy weeknights or casual dinners.

  • 1 lb sirloin steak or ribeye, cut into 1-inch cubes
  • Salt and freshly ground black pepper, to taste
  • 1 tbsp olive oil
  • 3 tbsp unsalted butter, divided
  • 4 cloves garlic, minced
  • 1 tsp fresh thyme leaves or ½ tsp dried thyme (optional)
  • 1 tbsp fresh parsley, chopped
  • 8 oz cremini or button mushrooms, sliced
  • Salt and pepper, to taste

Instructions

  1. Cut steak into 1-inch cubes, trim excess fat, and pat dry with paper towels. Slice mushrooms evenly. Season steak and mushrooms with salt and pepper.
  2. Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add steak cubes in a single layer without overcrowding. Cook undisturbed for 2-3 minutes, then turn to brown all sides. Remove steak and set aside.
  3. In the same pan, add 1 tbsp butter and sliced mushrooms. Stir occasionally until mushrooms release moisture and turn lightly golden. Season with salt and pepper.
  4. Push mushrooms to one side of the pan. Add remaining 2 tbsp butter and minced garlic. Stir garlic gently for about 30 seconds until fragrant but not browned. Add thyme if using and mix everything together.
  5. Return steak bites to the pan and toss to coat in garlic butter sauce. Cook for 1-2 minutes to meld flavors and heat through without overcooking.
  6. Remove from heat and sprinkle chopped parsley over the top before serving.

Notes

Pat steak dry before cooking to ensure a good sear. Avoid overcrowding the pan to prevent steaming. Use room temperature meat for even cooking. Add garlic butter after searing steak to avoid burning garlic. Cook steak in batches if necessary.
