  • 3 medium zucchinis, spiralized into noodles (about 4 cups)
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. Prepare the zucchini noodles: Wash and trim the zucchini ends. Spiralize into noodles or drain and pat dry if using pre-packaged noodles. Set aside.
  2. Prep the shrimp: Peel and devein if needed. Pat dry thoroughly and season lightly with salt and pepper.
  3. Cook the shrimp: Heat 2 tablespoons butter in a large nonstick skillet over medium-high heat. Add minced garlic and sauté for 30 seconds until fragrant. Add shrimp in a single layer and cook 2-3 minutes per side until pink and opaque. Remove shrimp and set aside.
  4. Sauté the zucchini noodles: In the same skillet, add remaining 2 tablespoons butter. Toss in zucchini noodles and red pepper flakes if using. Sauté for 2-3 minutes until noodles are tender but still firm.
  5. Combine and finish: Return shrimp to the pan with zucchini noodles. Add fresh lemon juice and stir gently. Adjust seasoning with salt and pepper if needed.
  6. Garnish and serve: Sprinkle chopped fresh parsley over the top before serving.
