  • 1 tablespoon honey or maple syrup
  • 1 teaspoon toasted sesame oil
  • 1 clove garlic, minced
  • ½ teaspoon grated fresh ginger (optional)
  • ¼ teaspoon red pepper flakes or sriracha (optional)
  • Water to thin the sauce as needed
  • 1 cup shredded carrots
  • 1 cup thinly sliced red bell pepper
  • 1 cup snap peas or snow peas, trimmed
  • 2 green onions, sliced
  • ½ cup chopped fresh cilantro or basil (optional)
  • Optional garnishes: chopped peanuts, fresh lime wedges, toasted sesame seeds

Instructions

  1. Bring a large pot of salted water to a boil. Add 8 oz (225 g) rice noodles and cook according to package instructions (usually 4 to 6 minutes) until tender but still firm.
  2. Drain noodles in a colander and rinse under cold water to stop cooking. Toss lightly with a drizzle of oil to prevent sticking and set aside.
  3. In a medium bowl, whisk together ½ cup creamy peanut butter, 3 tablespoons soy sauce, 2 tablespoons lime juice, 1 tablespoon honey or maple syrup, 1 teaspoon toasted sesame oil, 1 minced garlic clove, ½ teaspoon grated fresh ginger (if using), and ¼ teaspoon red pepper flakes or sriracha (if using).
  4. Add water a tablespoon at a time until the sauce reaches a smooth, pourable consistency.
  5. While noodles cook, shred carrots, thinly slice red bell pepper, trim snap peas, slice green onions, and chop cilantro or basil if using.
  6. Place drained noodles in a large bowl or pot. Pour peanut sauce over noodles and toss gently with tongs or chopsticks to coat evenly.
  7. Add shredded carrots, bell pepper, snap peas, and green onions. Toss again to combine.
  8. Divide noodles into bowls and garnish with chopped peanuts, toasted sesame seeds, fresh herbs, and lime wedges. Serve immediately.

Notes

Use natural creamy peanut butter for best texture. Rinse noodles under cold water immediately after cooking to prevent mushiness. Adjust sauce thickness with water as needed. Add protein like grilled chicken, shrimp, or tofu for a heartier meal. For vegan, substitute honey with maple syrup or agave nectar and use tamari instead of soy sauce.
