A quick and easy creamy avocado toast topped with everything bagel seasoning, perfect for breakfast or a light snack. This recipe combines creamy avocado with a crunchy, savory seasoning for a satisfying and delicious bite.

  • 2 medium ripe avocados
  • 2 tablespoons sour cream or Greek yogurt (dairy-free yogurt can be used for vegan option)
  • 1 teaspoon fresh lemon juice
  • 1½ teaspoons everything bagel seasoning (contains sesame seeds, poppy seeds, dried garlic, dried onion, and sea salt)
  • Pinch of salt, to taste
  • Freshly ground black pepper, a few grinds
  • 4 slices bread of choice (sourdough, whole wheat, or gluten-free bread)
  • Extra virgin olive oil (optional, for drizzling on bread before toasting)

Instructions

  1. Toast 4 slices of your chosen bread until golden and crispy (about 2-3 minutes depending on your toaster or oven broiler). Optionally, drizzle a little olive oil on the bread before toasting for extra flavor.
  2. In a medium bowl, cut and scoop out the flesh of 2 ripe avocados. Mash them using a fork or potato masher until mostly smooth but still a bit chunky.
  3. Add 2 tablespoons sour cream or Greek yogurt, 1 teaspoon fresh lemon juice, a pinch of salt, and a few grinds of black pepper to the mashed avocado.
  4. Stir the avocado mixture until creamy and well combined. Taste and adjust seasoning if needed.
  5. Spread a generous amount of the creamy avocado mixture evenly on each slice of toasted bread.
  6. Generously sprinkle 1½ teaspoons of everything bagel seasoning over each slice.
  7. Optionally, add thin slices of radish, cherry tomatoes, or a drizzle of honey for a sweet contrast.
  8. Serve immediately for best texture and flavor.

Notes

Use perfectly ripe avocados for best texture. Add lemon juice early to prevent browning. Season with everything bagel seasoning last to keep its crunch. For vegan version, substitute sour cream with dairy-free yogurt or mashed silken tofu. Leftover avocado mixture can be stored airtight with plastic wrap pressed on surface and refrigerated for up to 1 day.
