  • 2 ripe but firm peaches, cut into 1-inch chunks
  • 1 red onion, cut into 1-inch pieces
  • Wooden or metal skewers

  • 3 tablespoons bourbon
  • 2 tablespoons peach preserves or apricot jam
  • 1 tablespoon apple cider vinegar
  • 1 clove garlic, minced
  • ½ teaspoon smoked paprika
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • Fresh basil or mint leaves, chopped (optional)
  • Green onions, sliced (optional)
  • Lime wedges (optional)

Instructions

  1. Make the glaze: In a small bowl, whisk together the BBQ sauce, bourbon, peach preserves, apple cider vinegar, minced garlic, smoked paprika, salt, and pepper. Set aside about ¼ cup of the glaze for basting later.
  2. Prep the chicken and fruit: Cut the chicken breasts into 1-inch cubes. Cut the peaches into similar-sized chunks, and cut the red onion into 1-inch pieces. Pat the peaches dry with a paper towel.
  3. Assemble the skewers: Thread the chicken, peaches, and onion pieces onto the skewers, alternating as you go. Leave a tiny gap between each piece.
  4. Coat with glaze: Brush the reserved ¼ cup of glaze all over the assembled skewers.
  5. Grill the skewers: Preheat grill or grill pan to medium-high heat. Place skewers on the grill and cook for 4-5 minutes on the first side. Flip carefully and cook for another 4-5 minutes, until chicken is cooked through (internal temperature of 165°F) and peaches are slightly charred. During the last 2 minutes, brush remaining glaze onto the skewers.
  6. Rest and serve: Remove skewers from the grill and let rest for 2 minutes. Sprinkle with fresh basil or mint, sliced green onions, and a squeeze of lime if desired. Serve immediately.

For best results, use firm but ripe peaches. If using wooden skewers, soak them in water for at least 20 minutes to prevent burning. Always set aside some glaze before brushing on raw chicken to avoid contamination. Let skewers rest for 2 minutes after grilling to keep chicken juicy. For a non-alcoholic version, substitute bourbon with 1 teaspoon bourbon extract or extra apple cider vinegar and vanilla extract.
