  • 750 ml chilled sparkling wine or Champagne (brut or extra dry)
  • Club soda or sparkling water (optional, for lighter mimosas)
  • Ice cubes
  • Fresh mint or additional basil sprigs for garnish

Instructions

  1. Prepare the Strawberry Basil Puree (10 minutes): In a blender, combine sliced strawberries, fresh basil leaves (reserve some for garnish), fresh lemon juice, and simple syrup. Blend until smooth but still slightly textured. Taste and adjust sweetness if needed. Transfer to a serving pitcher and chill.
  2. Chill the Sparkling Wine (at least 30 minutes prior): Keep your bottle in the fridge or an ice bucket until ready to serve.
  3. Set Up the Mimosa Bar (15 minutes): Arrange the strawberry basil puree, sparkling wine, club soda (if using), and garnishes like extra strawberry slices, lemon wheels, and basil sprigs on a table or counter. Provide glasses and utensils for mixing.
  4. Serve: Guests can start by filling their glasses about halfway with strawberry basil puree, then top with sparkling wine. Add a splash of club soda for lighter mimosas. Garnish with basil or fruit as desired.

Notes

Prepare the strawberry basil puree up to 2 days ahead and keep refrigerated. Keep basil garnishes fresh by wrapping in a damp paper towel and storing in a sealed plastic bag in the fridge. Pour sparkling wine slowly down the side of the glass to preserve bubbles. If puree is too thick, thin with cold water or club soda. Rim glasses with sugar and lemon juice for a festive touch.
