Instructions

  1. Cream the butter and sugar in a large bowl until pale and fluffy, about 3 to 4 minutes.
  2. Beat in the egg and vanilla extract until combined.
  3. In a separate bowl, whisk together the flour, cornstarch, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture, mixing on low speed just until the dough forms. Avoid overmixing.
  5. Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
  6. Roll the dough on a lightly floured surface to about ¼ inch (6 mm) thickness.
  7. Use alphabet cookie cutters to cut out letters and transfer to lined baking sheets.
