A simple yet delicious sandwich combining crusty baguette, salty prosciutto, creamy brie, and sweet honey, perfect for easy summer picnics.

  • 12-inch crusty baguette (about 30 cm), freshly baked
  • 6 to 8 thin slices prosciutto (about 3 ounces / 85 grams)
  • 6 ounces brie cheese (170 grams), sliced or torn
  • 2 to 3 tablespoons honey (preferably raw or wildflower)
  • 1 cup fresh arugula or baby spinach (about 30 grams), optional
  • 1 to 2 tablespoons butter or olive oil for toasting, optional
  • Freshly ground black pepper, a small pinch
  • Optional: thinly sliced green apples or pears for added sweetness

Instructions

  1. Slice the baguette lengthwise into two even halves, about 12 inches (30 cm) long. Optionally, slice each half into 1-inch (2.5 cm) thick sandwich portions.
  2. Heat a skillet over medium heat and add butter or olive oil. Place the baguette halves cut-side down and toast until golden brown and crisp, about 2–3 minutes. Watch carefully to avoid burning.
  3. Slice or tear the brie into pieces about 1/4 inch (0.6 cm) thick. Optionally, warm the brie slices gently in the microwave for 15–20 seconds to soften slightly.
  4. On the toasted baguette halves, layer the prosciutto slices evenly. Add the softened brie on top of the prosciutto. Drizzle 1 to 1 1/2 tablespoons of honey over the brie. Sprinkle a small pinch of freshly ground black pepper and add the arugula or baby spinach.
  5. Carefully place the top half of the baguette over the fillings. Press down gently to keep everything in place without squashing the bread.
  6. If taking on a picnic, wrap the sandwich tightly in parchment or wax paper to maintain freshness. If serving immediately, slice into portions and enjoy.

Notes

Do not over-toast the bread to avoid sogginess from honey. Slice brie thinly and warm slightly to soften without melting too much. Assemble sandwich close to serving time, especially if packing for a picnic. Add honey and greens just before eating to keep bread crisp. For gluten-free, use gluten-free baguette or ciabatta. Prosciutto can be substituted with smoked turkey or ham.
