Instructions

  1. Preheat the oven to 350°F (175°C) and position the rack in the center.
  2. In a 9-inch round cake pan or cast-iron skillet, melt 3 tablespoons unsalted butter over medium heat.
  3. Add ½ cup packed brown sugar and stir until bubbling and smooth, about 3-4 minutes.
  4. Remove from heat and stir in 2 tablespoons bourbon.
  5. Arrange sliced peaches in a single layer on top of the caramel glaze, overlapping slightly.
  6. In a medium bowl, whisk together flour, baking powder, and salt.
  7. In a large bowl, beat 3 tablespoons softened butter with granulated sugar until light and fluffy.
  8. Add eggs one at a time, beating well after each addition, then stir in vanilla extract.
  9. Alternately add dry ingredients and milk to the wet mixture, beginning and ending with dry ingredients, mixing gently until just combined.
  10. Pour batter evenly over the arranged peaches and spread gently with a spatula.
  11. Bake for 40-45 minutes until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  12. Cool the cake in the pan for 15 minutes, then run a knife around the edges and invert onto a serving plate.
