A festive and easy-to-make fruit pizza featuring a buttery sugar cookie crust, creamy cream cheese frosting, and fresh red, white, and blue fruit arranged like a flag. Perfect for summer celebrations and last-minute gatherings.

Ingredients

Scale
  • 1 package (about 16 oz) refrigerated sugar cookie dough
  • 1 tablespoon all-purpose flour (to dust the pan)
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 1 1/2 cups powdered sugar, sifted
  • 1 teaspoon pure vanilla extract
  • 2 cups fresh strawberries, hulled and sliced
  • 1 1/2 cups fresh blueberries
  • Optional: 1/2 cup sliced kiwi or banana
  • Optional garnishes: fresh mint leaves, light dusting of powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Lightly flour your pizza pan or baking sheet to prevent sticking. Roll out the sugar cookie dough onto the pan, shaping it into a 12-inch circle.
  3. Bake the dough for 15-18 minutes or until the edges turn a gentle golden brown. Keep a close eye after 15 minutes.
  4. Cool the crust completely on a wire rack for 30-40 minutes to prevent frosting from melting.
  5. In a mixing bowl, beat softened cream cheese and butter together until creamy and smooth, about 2-3 minutes. Gradually add powdered sugar and vanilla extract, beating until fluffy and spreadable.
  6. Spread an even layer of cream cheese frosting over the cooled crust, about 1/4 to 1/3 inch thick.
  7. Arrange the sliced strawberries, blueberries, and optional kiwi or banana in a flag pattern: red stripes with strawberries, blue section with blueberries, and white space from frosting or kiwi slices.
  8. Chill the assembled fruit pizza for at least 30 minutes before serving to firm up the frosting and meld flavors.
  9. Garnish with fresh mint or a light dusting of powdered sugar if desired.

Notes

Cool the crust completely before frosting to prevent melting. Slice large strawberries thinly for balanced fruit layers. Tent the crust with foil if edges brown too quickly. Wash and dry fruit thoroughly to avoid sogginess. Assemble fruit close to serving time to maintain freshness.
