  • ½ cup (120g) baking soda (for the bath)
  • 10 cups (2.4 liters) water (for the bath)
  • Coarse sea salt or pretzel salt (for sprinkling)
  • 1 large egg (for egg wash)
  • 1 tablespoon water (for egg wash)
  • 8 ounces (225g) sharp cheddar cheese, freshly grated
  • ¾ cup (177ml) light lager beer (e.g., Pilsner or Helles)
  • 2 tablespoons (28g) unsalted butter (for dip)
  • 2 tablespoons (16g) all-purpose flour (for dip)
  • ¼ cup (60ml) whole milk
  • 1 teaspoon Dijon mustard
  • ½ teaspoon Worcestershire sauce
  • ¼ teaspoon garlic powder
  • Pinch cayenne pepper (optional)

Instructions

  1. Activate the yeast: In a small bowl, combine warm water (110°F) and brown sugar. Sprinkle yeast on top and let sit for 5-7 minutes until foamy.
  2. Make the dough: In a large bowl, whisk together flour and salt. Add yeast mixture and melted butter. Stir until a shaggy dough forms. Turn onto a floured surface and knead for 6-8 minutes until smooth and elastic.
  3. First rise: Lightly oil a bowl, place dough inside, turning to coat. Cover with a towel and let rise in a warm spot for 1 hour, or until doubled in size.
  4. Shape the bites: Punch down dough. Divide into 4 pieces. Roll each into a 12-inch rope, 1 inch thick. Cut into 1-inch pieces (about 12-15 per rope). You’ll have about 50-60 bites total.
  5. Baking soda bath: Bring 10 cups water and ½ cup baking soda to a boil in a large pot. Reduce to a simmer. Working in batches of 6-8, drop bites in and soak for 60 seconds, flip, and soak another 30 seconds. Remove with a slotted spoon and place on a parchment-lined baking sheet, spaced 1 inch apart.
  6. Egg wash and salt: Preheat oven to 425°F (220°C). Beat egg with 1 tablespoon water. Brush each bite with egg wash and sprinkle with coarse salt.
  7. Bake: Bake for 12-15 minutes, rotating pan halfway, until deep golden brown and firm.
  8. Make the beer cheese dip: In a small saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute. Slowly pour in beer, whisking constantly. Add milk, Dijon mustard, Worcestershire sauce, garlic powder, and cayenne (if using). Reduce heat to low and gradually add grated cheddar, whisking until smooth. Cook for 3-4 minutes until thick and creamy.
  9. Serve: Brush hot pretzel bites with melted butter. Serve immediately with warm beer cheese dip.
