Ingredients

  • Brie or Camembert (8 oz wheel)
  • Aged Cheddar (6 oz block)
  • Blue Cheese or Gorgonzola (4 oz)
  • Goat Cheese Log (4 oz)
  • Honeycrisp Apples (2 medium)
  • Bartlett or Bosc Pears (2 medium)
  • Dried Figs (1 cup)
  • Pomegranate Seeds (½ cup)
  • Seedless Red Grapes (1 cup, small clusters)
  • Prosciutto (4 oz, thinly sliced)
  • Sopressata or Genoa Salami (4 oz, sliced)
  • Roasted Almonds or Candied Pecans (1 cup)
  • Honeycomb or Good Quality Honey (¼ cup)
  • Fig Jam or Apple Butter (⅓ cup)
  • Crusty Baguette (1 large, sliced thin)
  • Crackers (2-3 varieties, about 12 oz total)
  • Fresh Rosemary Sprigs (2-3 sprigs)
  • Edible Flowers or Sage Leaves (optional)

Instructions

  1. Take your cheeses out of the fridge 30 minutes before serving.
  2. Slice your baguette into thin rounds, about ¼ inch thick. Optionally toast them at 375°F for 8-10 minutes.
  3. Core and slice the apples and pears into thin wedges. Rinse and dry the grapes, keeping them in small clusters.
  4. Arrange the cheese first: place the brie wheel whole, slice the cheddar into triangles or cubes, crumble the blue cheese, and slice the goat cheese log into rounds.
  5. Add ramekins filled with honey, fig jam or apple butter, and pomegranate seeds in different spots on the board.
  6. Layer in the meats: fold prosciutto into loose ribbons and fan out the sopressata slices.
  7. Fill in with fruit: arrange apple and pear slices in overlapping fans, scatter dried figs, place grape clusters, and sprinkle pomegranate seeds.
  8. Add the crunch: pour nuts into any remaining empty spaces.
  9. Garnish with rosemary sprigs and drizzle honey over the brie and goat cheese.
  10. Serve immediately with small plates, napkins, and cheese knives.

Notes

Cheese temperature is everything—let it come to room temperature for best flavor. Slice fruit right before serving to prevent browning. Balance textures and flavors on the board. Don’t forget the honey drizzle over brie or goat cheese. Make extra if serving more than 6 people.
