  • 2 large eggs, room temperature

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×5-inch loaf pan and set aside.
  2. Mash the bananas thoroughly in a large mixing bowl with a fork or potato masher until mostly smooth with a few small lumps remaining.
  3. Add the melted butter to the mashed bananas and stir gently until combined.
  4. Mix in the sugar, eggs, and vanilla extract one at a time, stirring just enough to blend.
  5. In a separate small bowl, whisk together the flour, baking soda, salt, and cinnamon.
  6. Gradually add the dry ingredients to the banana mixture, stirring gently with a spoon or spatula. Stop once no flour patches remain to avoid overmixing.
  7. Fold in optional nuts or chocolate chips if using.
  8. Pour the batter into the prepared loaf pan and smooth the top evenly with a spatula.
  9. Bake for 55-65 minutes until a toothpick inserted into the center comes out clean or with a few moist crumbs. Start checking around 50 minutes.
  10. Cool the bread in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
