These Maple Glazed Roasted Delicata Squash Rings are a quick and stunning fall side dish, ready in 30 minutes. The rings get caramelized edges and a tender center, making them perfect for weeknights or holiday tables.

Ingredients

Scale
  • 2 medium delicata squash (about 1.5 pounds total)
  • 2 tablespoons olive oil
  • 3 tablespoons pure maple syrup
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon cinnamon (optional)
  • Pinch of cayenne pepper (optional)
  • Fresh thyme or rosemary sprigs (for garnish, optional)
  • Flaky sea salt (for garnish, optional)
  • Crumbled goat cheese or feta (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or a silicone mat.
  2. Wash and dry the delicata squash. Slice off about ¼ inch from both ends.
  3. Slice the squash crosswise into ½-inch thick rings. Remove seeds and stringy pulp from the center of each ring.
  4. In a small bowl, whisk together olive oil, maple syrup, salt, pepper, and cinnamon and cayenne if using.
  5. Place the rings in a large bowl. Pour the maple glaze over them and toss gently until every ring is coated. Let sit for 2-3 minutes if time allows.
  6. Arrange the rings in a single layer on the prepared baking sheet, leaving space between each ring.
  7. Roast for 15 minutes. Remove from oven and flip each ring over.
  8. Roast for another 10-15 minutes, until golden brown, caramelized, and tender when pierced with a fork.
  9. Remove from oven and let rest on the baking sheet for 2 minutes.
  10. Transfer to a serving platter. Sprinkle with flaky sea salt and fresh thyme leaves if using. Serve warm or at room temperature.

Notes

Do not skip flipping the rings halfway through for even caramelization. Slice rings evenly at ½ inch thickness for consistent cooking. Leave space on the baking sheet to avoid steaming. Use parchment paper for easy cleanup. Start checking for doneness at 20 minutes total roasting time. Leftovers reheat well in a 350°F oven for 5-7 minutes or in an air fryer at 350°F for 3-4 minutes.
