A lighter, more refined sweet potato casserole with nutty brown butter, aromatic sage, and a crunchy pecan crumble. Perfect for holiday tables or weeknight dinners, this dish lets the sweet potato shine without being overly sweet or heavy.

Ingredients

Scale
  • 3 pounds sweet potatoes, peeled and cut into 1-inch cubes (about 4–5 medium sweet potatoes)
  • 4 tablespoons unsalted butter
  • 10–12 fresh sage leaves, plus extra for garnish
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper, freshly ground
  • 2 tablespoons pure maple syrup
  • 1 cup pecans, chopped
  • 3 tablespoons unsalted butter, melted
  • 3 tablespoons all-purpose flour (or almond flour for gluten-free)
  • 2 tablespoons brown sugar, packed (light or dark)
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the sweet potatoes: Place the peeled and cubed sweet potatoes in a large pot and cover them with cold water by about an inch. Add a generous pinch of salt to the water. Bring to a boil over high heat, then reduce to a simmer and cook for 12-15 minutes, until the sweet potatoes are fork-tender but not falling apart. Drain them in a colander and let them sit for a minute to steam off excess moisture.
  3. Make the brown butter and sage: While the sweet potatoes are cooking, place the 4 tablespoons of butter in a small skillet over medium heat. Let it melt completely, then continue cooking, swirling the pan occasionally. The butter will foam up, then the foam will subside, and you will start to see golden brown specks forming at the bottom of the pan. This takes about 4-5 minutes total. The moment the butter smells nutty and toasty and turns a warm amber color, add the fresh sage leaves. They will…
  4. Assemble the sweet potato base: In a large mixing bowl, combine the drained sweet potatoes with the reserved brown butter, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 2 tablespoons maple syrup. Gently toss everything together with a wooden spoon or spatula. You want the sweet potatoes to be well-coated but not mashed—some chunks should remain intact for the best texture. Transfer the mixture to your greased 13×9-inch baking dish and spread it into an even layer.
  5. Make the pecan crumble: In a small bowl, combine the chopped pecans, 3 tablespoons melted butter, 3 tablespoons flour, 2 tablespoons brown sugar, 1/4 teaspoon salt, and 1/4 teaspoon cinnamon if using. Stir until everything is evenly moistened and clumps together. The mixture should look like wet sand with some larger pecan pieces visible.
  6. Top and bake: Sprinkle the pecan crumble evenly over the sweet potato mixture. Bake for 20-25 minutes, until the topping is golden brown and the sweet potatoes are bubbling around the edges. The crumble should feel firm to the touch and smell deeply nutty.
  7. Garnish and serve: Remove the casserole from the oven and let it rest for 5 minutes. Crumble the reserved crispy sage leaves over the top. Serve warm or at room temperature.

Notes

Do not walk away when browning the butter—it can go from perfect to burnt in seconds. Be gentle when tossing sweet potatoes to avoid mashing them. For make-ahead, assemble up to 24 hours in advance and refrigerate; add 10 minutes to baking time. Leftovers keep for up to 4 days in the refrigerator and taste even better the next day.
