This creamy, cheesy mashed potato casserole is lightened up with Greek yogurt and chicken broth, then topped with crispy onions and turkey bacon for a healthier twist on comfort food.

Ingredients

Scale
  • 3 pounds Yukon Gold potatoes, peeled and quartered
  • 1/2 cup low-sodium chicken broth
  • 1/2 cup plain Greek yogurt (full-fat or 2%)
  • 4 tablespoons unsalted butter, softened
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 3/4 teaspoon salt, plus more to taste
  • 1/4 teaspoon black pepper
  • 1 1/2 cups shredded sharp cheddar cheese, divided
  • 4 slices turkey bacon, cooked and crumbled
  • 3 green onions, thinly sliced
  • 1 cup crispy fried onions (store-bought)

Instructions

  1. Preheat oven to 375°F (190°C). Bring a large pot of salted water to a boil.
  2. Peel and quarter potatoes. Boil for 15-20 minutes until fork-tender.
  3. Drain potatoes thoroughly and let steam dry for 2 minutes.
  4. Return potatoes to pot and mash until mostly smooth with a few lumps.
  5. Add chicken broth, Greek yogurt, butter, garlic powder, onion powder, salt, and pepper. Stir until creamy.
  6. Fold in 1 cup cheddar cheese and half the crumbled turkey bacon.
  7. Spread potato mixture into a 9×13-inch baking dish. Top with remaining 1/2 cup cheddar, turkey bacon, and green onions.
  8. Bake for 20 minutes until bubbly. Sprinkle crispy onions on top and bake 5-7 more minutes until golden.
  9. Let rest 5 minutes before serving.

Notes

Add crispy onions only at the end to prevent burning. Use room-temperature yogurt and butter for best texture. For a vegetarian version, skip bacon and add sautéed mushrooms and sun-dried tomatoes.
