  • 4 large flour tortillas (10-inch)
  • 8 ounces cream cheese, softened
  • 8 ounces deli turkey breast
  • 4 slices provolone cheese
  • 4 large lettuce leaves (romaine or green leaf)
  • Salt and black pepper to taste
  • 2 tablespoons ranch dressing or honey mustard (optional)

Instructions

  1. Soften the cream cheese: Take the cream cheese out of the fridge about 30 minutes before you start. If in a hurry, microwave on low power for 10-15 seconds until soft but not melted.
  2. Prepare your work surface: Lay a large flour tortilla flat on a clean, dry cutting board.
  3. Spread the cream cheese: Using an offset spatula or butter knife, spread a thin, even layer of softened cream cheese over the entire surface of the tortilla, leaving about a half-inch border around the edges.
  4. Season the cream cheese: Sprinkle a tiny pinch of salt and a dash of black pepper over the cream cheese.
  5. Layer the turkey: Place 2-3 slices of deli turkey evenly over the cream cheese, overlapping slightly to cover most of the tortilla, leaving the half-inch border.
  6. Add the cheese: Lay 1-2 slices of provolone cheese over the turkey, tearing or folding to fit evenly.
  7. Add the lettuce: Place a large, dry lettuce leaf on top of the cheese. Pat dry with a paper towel if needed to prevent sogginess.
  8. Roll it tightly: Starting from one edge, roll the tortilla as tightly as possible without tearing, using fingers to keep filling in place.
  9. Wrap and chill: Wrap the rolled tortilla tightly in plastic wrap or beeswax wrap, twist the ends to seal, and refrigerate for at least 30 minutes (or 15 minutes in the freezer if in a rush).
  10. Slice into pinwheels: After chilling, unwrap the roll and slice into 1-inch thick rounds using a sharp knife with a gentle sawing motion. You should get about 8-10 pinwheels per wrap.
  11. Secure with toothpicks (optional): If packing for lunchboxes, stick a toothpick through each pinwheel to keep it from unrolling.

Notes

For best results, use room-temperature ingredients. Chill the rolls before slicing to prevent squishing. Keep lettuce dry to avoid sogginess. Assemble rolls up to 24 hours in advance for better flavor. Freeze unsliced rolls for up to 1 month.
