  • 1/2 cup plain Greek yogurt
  • 3 large eggs, room temperature
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed

  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 box (15.25 oz) yellow cake mix
  • 1/2 cup unsalted butter, melted
  • 1 cup pecans, roughly chopped
  • 2 tablespoons brown sugar
  • 1 tablespoon unsalted butter, melted
  • 1/2 teaspoon cinnamon
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Spray a 9×13-inch baking dish with non-stick cooking spray or grease lightly with butter.
  2. In a large mixing bowl, combine the pumpkin puree, Greek yogurt, eggs, granulated sugar, brown sugar, and vanilla extract. Whisk until smooth and well combined.
  3. Sprinkle in the pumpkin pie spice, cinnamon, salt, and baking soda. Whisk until evenly distributed.
  4. Pour the pumpkin base into the prepared dish and spread into an even layer.
  5. Sprinkle the entire box of yellow cake mix evenly over the pumpkin base. Do not stir.
  6. Drizzle the melted butter evenly over the top of the cake mix.
  7. In a small bowl, combine the chopped pecans, brown sugar, melted butter, cinnamon, and salt. Stir until the pecans are well coated. Sprinkle this mixture evenly over the top of the cake.
  8. Bake for 40-45 minutes, until the top is golden brown and the edges are bubbling. A toothpick inserted into the center should come out with a few moist crumbs.
  9. Let the cake cool on a cooling rack for at least 15-20 minutes before serving.

Notes

Don’t overmix the pumpkin base. Use room temperature eggs. Ensure even butter distribution over the cake mix. Let the cake rest before serving for best texture. For a gluten-free version, use a gluten-free yellow cake mix. For a dairy-free version, use plant-based butter and dairy-free yogurt. For a nut-free version, skip the pecans and add extra cake mix to the topping.
