  • 1 teaspoon fresh ginger, grated

Instructions

  1. Prep the shrimp: Pat shrimp dry with paper towels. In a medium bowl, toss with olive oil, salt, and pepper. Set aside.
  2. Make the honey garlic glaze: In a small saucepan, combine honey, minced garlic, soy sauce, rice vinegar, grated ginger, sesame oil, and red pepper flakes. Whisk over medium heat until simmering, about 2 minutes. Stir in cornstarch slurry and cook until thickened and glossy, about 1 minute. Remove from heat and let cool slightly. Reserve half for marinating, half for basting and serving.
  3. Marinate the shrimp: Pour half of the cooled glaze over the shrimp and toss to coat. Cover and refrigerate for exactly 15 minutes. Meanwhile, soak wooden skewers in water for at least 30 minutes if using.
  4. Preheat the grill: Heat grill to 400-450°F. Clean and oil the grates.
  5. Skewer the shrimp: Thread shrimp onto skewers, about 5-6 per skewer, leaving space at the ends.
  6. Grill the skewers: Place skewers on hot grill. Cook for 2-3 minutes per side, brushing with reserved glaze after flipping. Total cook time 4-6 minutes. Shrimp should be pink and opaque with char marks.
  7. Glaze and serve: Remove from grill and brush with remaining glaze. Sprinkle with green onions, sesame seeds, and fresh herbs. Serve with lime wedges.

Notes

Don’t over-marinate; 15 minutes is the sweet spot. Use a two-step glazing technique for maximum stickiness. Control heat to prevent burning honey. For charcoal grills, use a two-zone fire. Let shrimp come to room temperature for 10 minutes before grilling for even cooking.
