Light & Bubbly Spiced Apple Cider Mimosa (Easy Fall Cocktail)

A quick and easy fall cocktail made with spiced apple cider and prosecco, perfect for gatherings. This light and bubbly mimosa comes together in under 15 minutes with simple ingredients.

  • 2 cups (480 ml) apple cider, fresh and unfiltered
  • 1 bottle (750 ml) prosecco or sparkling wine, chilled (dry or brut recommended)
  • 2 whole cinnamon sticks
  • 45 whole cloves
  • 1 whole star anise (optional)
  • 12 tablespoons (1530 ml) maple syrup or honey (optional, to taste)
  • 24 ounces (60120 ml) bourbon or whiskey (optional)
  • Ice for serving
  • Apple slices and cinnamon sticks for garnish

Instructions

  1. Simmer the Spiced Cider: Pour 2 cups of apple cider into a small saucepan. Add 2 cinnamon sticks, 4-5 whole cloves, and 1 star anise (if using). Place over medium heat and bring to a gentle simmer. Let simmer for 8-10 minutes.
  2. Sweeten (Optional): After 8 minutes, taste the cider. If too tart, stir in 1-2 tablespoons of maple syrup or honey. Start with 1 tablespoon, stir until dissolved, then taste again.
  3. Strain the Cider: Remove saucepan from heat. Place a fine-mesh strainer over a heatproof bowl or large measuring cup. Pour cider through strainer to catch spices. Discard solids. Let spiced cider cool for 10-15 minutes.
  4. Chill the Cider: Transfer strained cider to refrigerator and let cool completely, about 30 minutes. For a quicker method, pour into a shallow dish and freeze for 10 minutes.
  5. Prepare the Glasses: Slice apple into thin rounds. Cut a small slit in each slice to sit on the rim of the glass. Chill prosecco if not already cold.
  6. Mix the Mimosa: When cider is fully chilled, pour into a pitcher or large measuring cup. Slowly add chilled prosecco (ratio: 1 part spiced cider to 2 parts prosecco). Stir gently with a long spoon.
  7. Add Bourbon (Optional): If making boozy version, pour 1 ounce (30 ml) of bourbon into each glass before adding mimosa mixture.
  8. Serve Immediately: Pour mimosa mixture into prepared glasses, filling three-quarters full. Garnish with apple slice and short cinnamon stick. Serve right away.

Notes

Do not boil the cider; a gentle simmer is key. Ensure cider is completely cool before mixing with prosecco to preserve bubbles. Use dry prosecco to balance sweetness. Strain thoroughly to avoid biting into whole cloves. Spiced cider can be made up to 3 days ahead and stored in the fridge.
