A nourishing and delicious overnight oats recipe designed to support blood sugar balance during pregnancy with gestational diabetes. Creamy, nutty, and easy to prepare, it combines oats, chia seeds, almond butter, and optional berries for a wholesome breakfast.

  • ½ cup (45g) rolled oats (old-fashioned)
  • 1 tablespoon (12g) chia seeds
  • ¾ cup (180ml) unsweetened almond milk
  • 1 tablespoon (16g) natural almond butter
  • ½ teaspoon cinnamon
  • ½ teaspoon vanilla extract
  • Pinch of stevia or monk fruit sweetener (optional)
  • ¼ cup fresh or frozen berries (optional)

Instructions

  1. Measure the dry ingredients: combine ½ cup rolled oats and 1 tablespoon chia seeds in a jar or container and stir to mix evenly.
  2. Add liquids and flavorings: pour in ¾ cup unsweetened almond milk, ½ teaspoon cinnamon, and ½ teaspoon vanilla extract. Add a pinch of stevia or monk fruit sweetener if desired.
  3. Mix in almond butter: add 1 tablespoon natural almond butter and stir well to distribute through the oats.
  4. Stir thoroughly until the mixture is wet but thick enough to hold together. Add a splash more almond milk if too dry.
  5. Add ¼ cup fresh or frozen berries if using and mix gently.
  6. Seal the jar or container tightly and refrigerate overnight for at least 6 hours.
  7. In the morning, check the consistency and stir. Add a splash of almond milk if too thick.
  8. Serve cold or warm gently in the microwave for about 30 seconds. Optionally top with extra almond butter, nuts, or cinnamon.

Notes

Do not soak oats for more than 24 hours to avoid mushy texture. Stir well after adding almond butter to distribute flavor. Use natural almond butter and unsweetened almond milk to avoid added sugars. Store leftovers in the fridge up to 48 hours. Adjust berries intake based on blood sugar response.
