Fresh Nectarine Caprese Salad with Creamy Burrata

A fresh and easy twist on the classic Caprese salad using juicy nectarines and creamy burrata, drizzled with balsamic glaze and garnished with basil and toasted nuts.

Ingredients

  • 3 medium fresh nectarines, ripe but firm, sliced thinly
  • 8 oz (225g) creamy burrata cheese, gently torn into pieces
  • A handful of fresh basil leaves, torn or whole
  • 2 tablespoons extra virgin olive oil
  • 12 tablespoons balsamic glaze or reduction
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: toasted pine nuts or chopped walnuts

Instructions

  1. Wash and slice nectarines thinly into half-moon shapes about 1/8 inch (3 mm) thick.
  2. Gently tear the burrata into bite-sized pieces and arrange evenly on a serving platter.
  3. Fan the nectarine slices around and between the burrata pieces and scatter fresh basil leaves over the top.
  4. Optional: Warm a small pan over medium heat and toast pine nuts or walnuts, stirring frequently until golden and fragrant (2-3 minutes). Let cool and sprinkle over the salad.
  5. Drizzle 2 tablespoons of extra virgin olive oil over the salad, followed by 1-2 tablespoons of balsamic glaze.
  6. Sprinkle with sea salt and freshly ground black pepper to taste.
  7. Let the salad rest for a few minutes to allow flavors to mingle and serve immediately or refrigerate for up to 1 hour before serving.

Notes

Use ripe but firm nectarines to avoid mushiness. Tear burrata gently to keep creamy center intact. Toast nuts carefully over medium heat to avoid burning. Use high-quality balsamic glaze for best flavor. Serve fresh the same day for optimal texture and flavor.
