  • 4 fresh nectarines, ripe but firm, halved and pitted
  • 1 cup (8 oz) whole milk ricotta cheese
  • 2 tablespoons honey (raw or wildflower)
  • 1 teaspoon fresh lemon juice
  • 1 tablespoon olive oil, for brushing
  • Pinch of sea salt
  • Optional garnish: fresh mint leaves or toasted almonds

Instructions

  1. Preheat your grill to medium-high heat, about 375°F (190°C).
  2. Wash and halve the nectarines, removing the pits carefully. Brush each cut side lightly with olive oil.
  3. In a small bowl, combine ricotta cheese, honey, and fresh lemon juice. Stir until smooth and creamy. Adjust honey or lemon to taste.
  4. Place nectarines cut side down on the grill grates. Grill for 3-4 minutes until grill marks appear and fruit softens slightly but holds shape.
  5. Flip nectarines carefully and grill the skin side for another 2 minutes to warm through.
  6. Remove nectarines from grill and let cool for a minute or two.
  7. Spoon or pipe the honey ricotta mixture generously over the grilled nectarine halves.
  8. Sprinkle a pinch of sea salt over the top.
  9. Garnish with fresh mint leaves or toasted almonds if desired.
  10. Serve immediately and enjoy.

Use room temperature ricotta for a smooth, spreadable consistency. Handle ripe nectarines gently when flipping to keep halves intact. The honey ricotta topping can be made a few hours ahead and chilled, but add it just before serving for best texture and flavor.
