  • 2 cups fresh spinach (about 60g)
  • 1 cup ripe pineapple chunks (about 165g), fresh or frozen
  • 1 medium ripe banana
  • 1 teaspoon fresh ginger, grated
  • 1 cup coconut water (240ml)
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chia seeds (optional)

Instructions

  1. Measure 2 cups of fresh spinach and rinse well to remove any grit. Peel and slice the banana, grate the ginger finely, and if using fresh pineapple, cut it into chunks.
  2. Pour 1 cup (240ml) of coconut water into your blender to help the blades move easily and prevent leafy clumps.
  3. Add pineapple chunks, sliced banana, and spinach on top of the coconut water to help with even blending.
  4. Pour 1 tablespoon fresh lemon juice and 1 teaspoon grated ginger over the top to brighten and balance the flavors.
  5. Sprinkle in 1 tablespoon of chia seeds for extra fiber and texture, if using.
  6. Blend starting on low speed, then increase to high. Blend for about 45–60 seconds until smooth and creamy. Add more coconut water or regular water if the smoothie is too thick.
  7. Taste and adjust sweetness if desired by adding a drizzle of honey or maple syrup.
  8. Serve immediately in your favorite glass and enjoy.

Notes

Use fresh spinach for best flavor and texture. Frozen pineapple chills the smoothie without needing ice. Add protein boost with Greek yogurt or plant-based protein powder if desired. For a low-carb option, swap banana for avocado. Avoid over-blending to keep smoothie cool and fresh. Rinse blender immediately after use to ease cleaning.
