  • 23 tablespoons honey (preferably local and runny)
  • Flaky sea salt (like Maldon)
  • Optional: Fresh thyme leaves or chopped rosemary for garnish
  • Optional: Balsamic glaze for drizzling

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the baguette into ½-inch thick rounds (about 16-20 slices).
  3. Arrange the baguette slices on a baking sheet in a single layer. Brush or drizzle each slice lightly with olive oil on both sides.
  4. Toast the bread for 5-7 minutes, or until the edges are golden brown and the bread is crisp on the outside but still slightly soft in the center.
  5. While the bread is toasting, prepare the figs: rinse gently, pat dry, trim off the tough stem end, and slice each fig into ¼-inch thick rounds.
  6. Let the goat cheese come to room temperature (if not already).
  7. Once the bread is toasted, let it cool for about a minute. Spread a generous smear of goat cheese onto each toast (about 1 teaspoon per slice).
  8. Top each crostini with 1-2 fig slices.
  9. Drizzle honey over the top (about ½ teaspoon per crostini).
  10. Sprinkle with flaky sea salt.
  11. Garnish with fresh thyme leaves or chopped rosemary if using. Arrange on a serving platter and serve immediately.
