Fresh Caprese Sandwich Recipe Easy Homemade Pesto and Balsamic Glaze Delight

A quick and easy fresh Caprese sandwich featuring creamy mozzarella, ripe tomatoes, fresh basil, homemade or store-bought pesto, and a sweet-tart balsamic glaze. Perfect for a light lunch or casual gathering.

  • 8 ounces fresh mozzarella, sliced
  • 2 medium ripe tomatoes, sliced
  • A handful of fresh basil leaves, washed and dried
  • Ciabatta or crusty baguette, sliced lengthwise
  • 1/4 cup pesto (homemade or store-bought)
  • 2 tablespoons balsamic glaze
  • Extra virgin olive oil, for drizzling
  • Salt and freshly cracked black pepper, to taste

Instructions

  1. Slice the ciabatta or baguette lengthwise into two halves. Optionally toast the bread lightly on a grill pan or in a toaster oven for 2-3 minutes.
  2. Spread about 2 tablespoons of pesto evenly on the cut side of each bread half.
  3. Layer slices of fresh mozzarella over the pesto.
  4. Place the ripe tomato slices evenly over the mozzarella.
  5. Tuck a generous handful of fresh basil leaves over the tomatoes, tearing larger leaves if needed.
  6. Sprinkle flaky sea salt and freshly cracked black pepper over the layered ingredients.
  7. Drizzle about 2 tablespoons of balsamic glaze over the basil and tomato layers.
  8. Add a light drizzle of extra virgin olive oil over everything.
  9. Close the sandwich with the top half of the bread. Optionally grill in a panini press or skillet for 3-4 minutes until cheese softens and bread crisps.
  10. Slice the sandwich into halves or thirds and serve immediately.

Notes

Pat mozzarella dry if too wet to prevent soggy bread. Don’t overload sandwich to keep bread from getting too soft. Toast or grill sandwich for extra texture and melted cheese. Store components separately if preparing ahead to avoid sogginess.
