  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon oregano
  • Salt and pepper, to taste
  • 1 can (15 oz) refried beans
  • ½ cup sour cream (or Greek yogurt)
  • 2 ripe avocados, peeled and pitted
  • 1 tablespoon fresh lime juice
  • 2 tablespoons finely chopped cilantro
  • Salt, to taste
  • Optional: 1 small jalapeño, finely minced
  • 1 cup shredded sharp cheddar cheese
  • ½ cup diced tomatoes (fresh or canned, drained)
  • ¼ cup sliced black olives
  • 2 green onions, thinly sliced
  • Optional: sliced jalapeños or chopped fresh cilantro for garnish

Instructions

  1. Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
  2. Add the garlic and cook for another 30 seconds until fragrant.
  3. Add the ground beef, breaking it apart with a spatula. Cook until browned, about 7-8 minutes, stirring occasionally.
  4. Stir in chili powder, ground cumin, smoked paprika, oregano, salt, and pepper. Mix well and cook for another 2 minutes to let the spices bloom. Remove from heat and set aside to cool slightly.
  5. In a medium bowl, combine the refried beans and sour cream (or Greek yogurt). Stir until smooth and creamy.
  6. In another bowl, mash the avocados with lime juice and salt. Add chopped cilantro and optional jalapeño if desired. Taste and adjust seasoning.
  7. In your serving dish, start with a smooth layer of the bean mixture, spreading evenly with a spatula.
  8. Add the seasoned taco beef, spreading carefully to keep layers distinct.
  9. Follow with a thick layer of guacamole, smoothing the top.
  10. Sprinkle shredded cheddar cheese over the guacamole, then scatter diced tomatoes, sliced black olives, and green onions evenly on top. Add jalapeño slices or cilantro if using.
  11. Cover the dip with plastic wrap and refrigerate for at least 30 minutes to let the flavors meld and the layers firm up.
  12. Serve chilled with tortilla chips, sliced veggies, or crunchy crackers.

Chill the dip for at least 30 minutes before serving to help layers set and flavors meld. Drain excess liquid from tomatoes and olives to avoid sogginess. Hand-mash guacamole for best texture.
