  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp olive oil
  • 8 oz fettuccine or preferred pasta
  • Salt (for pasta water)
  • 1 cup heavy cream or half-and-half
  • ½ cup sun-dried tomatoes, chopped (oil-packed recommended)
  • ¼ cup cottage cheese, blended smooth
  • 2 cloves garlic, minced
  • ½ tsp red pepper flakes (optional)
  • ¼ cup grated Parmesan cheese
  • 2 tbsp fresh basil, chopped (or 1 tsp dried basil)
  • 1 tbsp butter

Instructions

  1. Pat the steak slices dry with paper towels. Toss with smoked paprika, garlic powder, salt, and pepper. Set aside.
  2. Bring a large pot of salted water to a boil. Cook fettuccine until al dente (8-10 minutes). Reserve ½ cup pasta water and drain pasta.
  3. In a blender, combine sun-dried tomatoes, cottage cheese, heavy cream, garlic, red pepper flakes, and Parmesan. Blend until smooth. Add pasta water if needed to loosen sauce.
  4. Heat olive oil in a skillet over medium-high heat. Sear steak slices 1-2 minutes per side until browned but juicy. Remove and keep warm.
  5. Reduce heat to medium. Add butter to skillet, then pour in blended sauce. Cook 3-5 minutes until warmed and slightly thickened. Stir in fresh basil.
  6. Add drained pasta and steak to skillet. Toss gently to coat and heat together 1-2 minutes.
  7. Serve immediately, garnished with extra Parmesan and basil if desired.

Notes

Use oil-packed sun-dried tomatoes for best flavor or rehydrate dry-packed in warm water. Blending cottage cheese into the sauce creates a smooth texture without heaviness. Avoid overcrowding the pan when searing steak to ensure proper browning. Let steak rest under foil after searing to keep juices locked in. For dairy-free, substitute cream with full-fat coconut milk and omit Parmesan.
