A quick and easy summer BBQ recipe that transforms watermelon into smoky, sweet, and savory grilled steaks with honey and sea salt.

  • 1 ripe seedless watermelon, sliced into 1-inch thick steaks
  • 2 tablespoons extra virgin olive oil
  • Honey, for drizzling (or maple syrup for vegan option)
  • Coarse sea salt or flaky Maldon salt, to taste
  • Freshly cracked black pepper (optional)
  • Fresh herbs like mint or basil (optional)
  • Crumbled feta or goat cheese (optional)

Instructions

  1. Rinse and pat dry the watermelon. Slice into 1-inch thick steaks, removing any seeds if needed.
  2. Lightly brush both sides of each watermelon steak with extra virgin olive oil.
  3. Preheat your grill to medium-high heat (about 375-400°F).
  4. Place the watermelon steaks on the grill and cook for 3-4 minutes per side until grill marks appear and the surface caramelizes slightly.
  5. Remove from grill and while still warm, drizzle honey generously over each piece and sprinkle with coarse sea salt.
  6. Optionally, add freshly cracked black pepper or chopped fresh herbs like mint or basil before serving.

Notes

Use thick 1-inch watermelon slices to prevent falling apart. Brush watermelon with olive oil instead of oiling the grill to avoid flare-ups. Keep grill clean and use medium-high heat for best caramelization. Do not overcook; 3-4 minutes per side is sufficient. Chilling watermelon before slicing can help firm it up. Optional toppings like feta cheese or fresh herbs add extra flavor.
