  • 4 ripe but firm peaches, halved and pitted
  • 3 tablespoons unsalted butter, softened
  • 1/2 cup packed brown sugar (preferably dark brown sugar)
  • 2 tablespoons bourbon (e.g., Maker’s Mark or Buffalo Trace)
  • 1/4 cup heavy cream
  • 1 teaspoon pure vanilla extract
  • Pinch of sea salt
  • Optional: 1/2 teaspoon cinnamon
  • Optional: chopped pecans or walnuts for garnish

Instructions

  1. Rinse the peaches under cool water and pat dry. Cut each peach in half and remove the pit carefully with a paring knife or spoon. Set aside.
  2. Preheat your grill or grill pan to medium-high heat (around 375–400°F). Brush the grates lightly with oil to prevent sticking.
  3. Place the peach halves cut-side down on the grill. Grill for 3–4 minutes without moving them to create caramelization.
  4. Flip the peaches and grill the skin side for another 2 minutes just to warm through, aiming for grill marks and a soft but intact peach.
  5. While peaches grill, melt the butter in a medium saucepan over medium heat. Stir in the brown sugar and cook for 2–3 minutes until it bubbles gently and starts to darken.
  6. Carefully add the bourbon and stir to combine. Slowly whisk in the heavy cream and vanilla extract. Let simmer for 3–4 minutes until the sauce thickens slightly and coats the back of a spoon.
  7. Season the sauce with a pinch of sea salt and cinnamon if using.
  8. Arrange grilled peaches on plates and spoon the warm bourbon caramel sauce generously over the top.
  9. Sprinkle with chopped nuts if desired and serve warm or at room temperature.

Notes

If the caramel sauce thickens too much as it cools, gently rewarm it before serving. Use ripe but firm peaches to avoid them falling apart on the grill. Brush grill grates with oil to prevent sticking. The sauce can be made ahead and reheated gently. For a dairy-free or paleo version, substitute brown sugar with coconut sugar and heavy cream with coconut cream.
