  • 2 tablespoons olive oil

Instructions

  1. Prepare the marinade by whisking together honey, sriracha, soy sauce, minced garlic, lime juice, olive oil, black pepper, and smoked paprika in a mixing bowl until glossy and slightly thick but pourable.
  2. Place the chicken drumsticks in a large bowl or zip-top bag and pour the marinade over them, ensuring each piece is well coated. Cover and refrigerate for at least 1 hour, up to overnight.
  3. Preheat the grill to medium-high heat (375-400°F / 190-205°C). Clean and oil the grates to prevent sticking.
  4. Place drumsticks on the grill skin side down. Grill for 12-15 minutes per side, turning every 5 minutes to ensure even cooking and a crisp char. Brush additional marinade on the chicken every few turns to build up the sticky glaze. Watch for flare-ups and manage heat accordingly.
