  • 3 tablespoons unsalted butter, softened
  • Juice of 1 lemon (about 2 tablespoons)
  • Zest of 1 lemon, finely grated

  • ½ teaspoon garlic powder
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon freshly ground black pepper, or to taste
  • Optional: pinch of red pepper flakes
  • Optional: chopped fresh parsley or thyme for garnish

Instructions

  1. Rinse garlic scapes under cold water and pat dry. Trim any tough ends and cut into manageable lengths about 6 inches long.
  2. Place scapes in a mixing bowl. Drizzle with olive oil, sprinkle with salt and black pepper, and toss to coat evenly.
  3. Preheat grill or grill pan to medium-high heat (around 400°F).
  4. Arrange garlic scapes in a single layer on the grill. Cook 2-3 minutes per side until dark char marks form and scapes are tender but slightly crisp.
  5. While grilling, melt butter in a small saucepan over low heat. Stir in lemon zest, lemon juice, garlic powder, and a pinch of salt. Keep warm.
  6. Transfer grilled scapes to a serving dish and drizzle with warm lemon butter. Toss gently to coat.
  7. Garnish with chopped fresh parsley or thyme if desired and serve warm or at room temperature.

Notes

Coat garlic scapes with olive oil before grilling to prevent burning and achieve perfect char. Let scapes rest off heat before drizzling lemon butter to avoid separation. If grilling is unavailable, roast at 425°F for 10-12 minutes as an alternative. Lemon butter sauce can be made ahead and reheated gently.
