Ingredients

Scale
  • 2 medium acorn squash
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 1 pound bulk Italian sausage
  • 1 small yellow onion, diced (about 1 cup)
  • 2 cloves garlic, minced
  • 1/2 cup dried cranberries
  • 1/2 cup cooked quinoa or rice
  • 1/4 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon fresh sage, chopped (or 1 teaspoon dried sage)
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with aluminum foil or parchment paper.
  2. Cut the acorn squash in half. Scoop out the seeds and stringy pulp with a spoon.
  3. Place the squash halves cut-side down on the prepared baking sheet. Roast for 10 minutes (par-cook).
  4. While the squash is in the oven, heat a large skillet over medium-high heat. Add the bulk Italian sausage and cook, breaking it up with a wooden spoon, until browned and cooked through, about 5 to 7 minutes. Use a slotted spoon to transfer the sausage to a bowl, leaving about 1 tablespoon of rendered fat in the pan.
  5. Add the diced onion to the same skillet with the reserved sausage fat. Cook over medium heat until softened and translucent, about 3 to 4 minutes. Add the minced garlic and cook for another 30 seconds until fragrant.
  6. In a large mixing bowl, combine the cooked sausage, sautéed onions and garlic, dried cranberries, cooked quinoa or rice, panko breadcrumbs, grated Parmesan, chopped sage, and red pepper flakes if using. Stir until well combined. Taste and adjust seasoning with salt and pepper.
  7. Remove the par-cooked squash from the oven. Flip them over so the cut sides are facing up. Brush the cut sides and the cavity with olive oil, and season lightly with salt and pepper. Divide the sausage filling evenly among the four squash halves, mounding it slightly in the center.
  8. Return the stuffed squash to the oven and bake for 15 to 18 minutes, until the squash is fork-tender and the filling is heated through and slightly golden on top. If you want a browner top, switch the oven to broil for the last 2 minutes.
  9. Let the stuffed squash rest on the baking sheet for 5 minutes before serving. Serve warm, garnished with a little extra Parmesan and fresh sage if desired.

Notes

Don’t skip the par-cook step—it ensures the squash is tender without becoming mushy. Use the rendered sausage fat to cook the onions for extra flavor. The filling should be moist but not wet; if it seems dry, add a tablespoon of chicken broth or water. Let the stuffed squash rest for 5 minutes before serving to allow the filling to set.
