Ingredients

Scale
  • 1 pound (450g) ground beef (80/20 recommended)
  • 1 medium yellow onion, diced
  • 3–4 garlic cloves, minced
  • 1 can (14.5 oz / 411g) diced tomatoes (fire-roasted preferred), undrained
  • 1 can (10 oz / 283g) Rotel tomatoes with green chiles, undrained
  • 1 can (15 oz / 425g) black beans, drained and rinsed
  • 1 can (15 oz / 425g) corn, drained (or 1.5 cups frozen corn)
  • 2 cups (480 ml) beef broth (low-sodium recommended)
  • 1 packet (1 oz / 28g) taco seasoning
  • 1 packet (1 oz / 28g) ranch seasoning mix
  • Optional toppings: shredded cheddar cheese, sour cream or Greek yogurt, fresh cilantro, diced avocado, tortilla chips or strips, lime wedges

Instructions

  1. Brown the ground beef in a large skillet over medium-high heat, breaking it up with a wooden spoon, until nicely browned (6-8 minutes). Drain excess fat, leaving about 1 tablespoon. Add diced onion and cook 3-4 minutes until softened, then stir in minced garlic for the last 30 seconds until fragrant.
  2. Transfer the browned meat mixture to a 4-quart or larger slow cooker. If there are browned bits stuck to the skillet, add a splash of beef broth and scrape them up, then pour that into the slow cooker.
  3. Add the undrained diced tomatoes, undrained Rotel, drained and rinsed black beans, and drained corn to the slow cooker. Stir to combine.
  4. Sprinkle the taco seasoning and ranch seasoning packets over the top. Pour in the beef broth. Stir everything together until the seasonings are mostly dissolved (use a whisk to prevent clumps).
  5. Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours. Avoid lifting the lid during cooking.
  6. Before serving, taste and adjust seasoning with salt, pepper, or a squeeze of lime juice if desired. If soup is too thick, stir in an extra ½ cup of broth or water. If too thin, cook uncovered on HIGH for 20-30 minutes.
  7. Ladle into bowls and serve with desired toppings.

Notes

For best flavor, brown the meat well and layer flavors. Watch salt levels as seasoning packets contain salt. Let soup rest on WARM for 30 minutes after cooking for deeper flavor. Leftovers taste even better the next day. Freezes well for up to 3 months.
