Easy Slow Cooker Taco Soup with Black Beans and Corn

A hearty, smoky, and hands-off slow cooker taco soup with black beans and corn that tastes like it simmered all day but requires minimal effort. Perfect for busy weeknights.

  • 1 lb ground beef (85/15)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 can (10 oz) Rotel diced tomatoes and green chiles
  • 2 cans (15 oz each) black beans, drained and rinsed
  • 1 cup frozen corn
  • 2 cups low-sodium beef broth
  • 1 packet (or 3 tablespoons) taco seasoning
  • 2 tablespoons tomato paste
  • Optional toppings: shredded cheddar cheese, sour cream, diced avocado, fresh cilantro, sliced jalapeños, crushed tortilla chips, lime wedges

Instructions

  1. Brown the ground beef in a large skillet over medium-high heat, breaking it up with a wooden spoon, until no longer pink (5-7 minutes). Transfer to the slow cooker using a slotted spoon, leaving about 1 tablespoon of fat in the pan.
  2. In the same skillet, sauté the diced onion for 3-4 minutes until softened. Add the minced garlic and cook for 30 seconds until fragrant. Scrape into the slow cooker.
  3. Deglaze the pan with about 1/4 cup of the beef broth, scraping up browned bits, and pour into the slow cooker.
  4. Add the fire-roasted diced tomatoes (with juices), Rotel tomatoes (with juices), and drained black beans to the slow cooker. Stir to combine.
  5. Sprinkle the taco seasoning over the top and add the tomato paste. Stir until fully incorporated.
  6. Pour in the remaining beef broth and stir well. Ensure the beef and beans are mostly submerged.
  7. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours.
  8. About 30 minutes before serving, stir in the frozen corn. Let it heat through.
  9. Taste and adjust seasoning with salt, hot sauce, or lime juice as needed.
  10. Ladle into bowls and serve with desired toppings.

Notes

For a thicker soup, mash half a cup of black beans before adding. For a vegetarian version, omit beef and use 3 cans of beans with vegetable broth. The soup gets better after a day in the fridge.
