This Easy Rotisserie Chicken Noodle Soup is the ultimate comfort food, ready in about 30 minutes using a store-bought rotisserie chicken. It’s simple, cheap, and tastes like a hug in a bowl.

  • 1 large yellow onion, diced (about 1 ½ cups)
  • 3 medium carrots, peeled and sliced into rounds (about 1 ½ cups)
  • 3 celery stalks, sliced (about 1 cup)
  • 4 cloves garlic, minced
  • 8 cups low-sodium chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • ½ teaspoon dried oregano
  • 1 bay leaf
  • Salt and black pepper to taste (start with 1 teaspoon salt and ½ teaspoon pepper)
  • 1 whole rotisserie chicken, skin removed and meat shredded (about 3–4 cups)
  • 8 ounces wide egg noodles
  • 2 tablespoons fresh parsley, chopped (optional)
  • Juice of ½ lemon

Instructions

  1. Prep your ingredients: dice onion, slice carrots and celery, mince garlic, and shred the rotisserie chicken while still warm.
  2. Place a large pot over medium heat and add butter. Once melted, add onion, carrots, and celery. Cook for 5-7 minutes until onions are translucent and carrots start to soften.
  3. Add minced garlic and stir for 30 seconds until fragrant.
  4. Pour in chicken broth, scraping up any brown bits from the bottom. Add thyme, rosemary, oregano, and bay leaf. Bring to a boil, then reduce heat and simmer for 10 minutes.
  5. While broth simmers, bring a separate pot of salted water to a boil. Cook egg noodles according to package directions, subtracting 1 minute for al dente. Drain and set aside.
  6. After broth has simmered, add shredded chicken and heat through for 2-3 minutes. Season with salt and pepper to taste.
  7. Turn off heat. Remove bay leaf. Stir in cooked noodles, lemon juice, and parsley if using.
  8. Serve immediately. For leftovers, store noodles separately from broth to prevent mushiness.
