  • 1 cup rolled oats (90g)
  • 1/2 cup sliced almonds (50g)
  • 1/3 cup unsalted butter, cold and cubed (75g)
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease your baking dish with butter or non-stick spray.
  2. In a large bowl, combine sliced peaches, granulated sugar, brown sugar, lemon juice, ground cinnamon, and all-purpose flour. Toss gently to coat evenly.
  3. Transfer the peach mixture to the prepared baking dish, spreading it out evenly.
  4. In a separate bowl, mix rolled oats, sliced almonds, brown sugar, a pinch of salt, and vanilla extract.
  5. Cut in cold, cubed unsalted butter using a pastry cutter or fork until the mixture resembles coarse crumbs with pea-sized butter pieces.
  6. Sprinkle the almond oat topping evenly over the peach filling.
