  • 1 pint (about 300 grams) cherry tomatoes, preferably red
  • 8 oz (225 grams) fresh mozzarella balls (Ciliegine size)
  • About 20 fresh basil leaves
  • 1 cup (150 grams) fresh blueberries
  • 1/4 cup (60 ml) balsamic vinegar
  • 1 tablespoon honey
  • 1 tablespoon extra virgin olive oil (optional)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 6-inch (15 cm) wooden skewers, soaked in water for 10 minutes if grilling (optional)

Instructions

  1. Prepare the balsamic glaze: Pour 1/4 cup (60 ml) balsamic vinegar into a small saucepan. Add 1 tablespoon honey. Heat on medium-low, stirring occasionally, until reduced by half and syrupy, about 8-10 minutes. Remove from heat and let cool slightly.
  2. Wash and dry the cherry tomatoes and blueberries. Pat dry with paper towels. Tear or pick fresh basil leaves from stems, discarding bruised or wilted leaves.
  3. Assemble the skewers: Thread one cherry tomato onto a wooden skewer, then fold or roll a basil leaf and add it, followed by a mozzarella ball and a fresh blueberry. Repeat until skewer is full (3-4 pieces per skewer).
  4. Arrange skewers on a serving platter. Lightly sprinkle with salt and freshly ground black pepper.
  5. Drizzle the balsamic glaze over the skewers just before serving. Optionally, drizzle with extra virgin olive oil for added richness.
  6. Optional: If not serving immediately, cover the platter with plastic wrap and refrigerate up to 2 hours. Bring to room temperature before serving.

Soak wooden skewers in water for 10 minutes before grilling to prevent burning. Use cherry tomatoes for firmness and better skewer holding. Reduce balsamic slowly to avoid burning.
