Ingredients

Scale
  • ½ cup (1 stick, 113g) unsalted butter
  • 3 medium ripe bananas (about 1½ cups mashed, 340g)
  • ¾ cup (150g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1½ cups (190g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ cup (60g) chopped walnuts
  • ¼ cup (50g) brown sugar, packed
  • 2 tablespoons (15g) all-purpose flour
  • 2 tablespoons (28g) cold unsalted butter, cubed

Instructions

  1. Brown the butter: Place ½ cup unsalted butter in a small saucepan over medium heat. Melt and swirl occasionally until golden specks form and it smells nutty, about 5 minutes. Pour into a heatproof bowl and let cool for 10 minutes.
  2. Preheat the oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving overhang on the long sides.
  3. Mash the bananas in a large mixing bowl with a fork until smooth with a few small lumps (about 1½ cups).
  4. Add the cooled brown butter, granulated sugar, eggs, and vanilla extract to the mashed bananas. Whisk until smooth and glossy.
  5. Sift the flour, baking soda, salt, and cinnamon over the wet mixture. Fold gently with a rubber spatula until just combined (10-12 strokes). Do not overmix.
  6. Make the streusel: In a small bowl, combine chopped walnuts, brown sugar, and 2 tablespoons flour. Add cold cubed butter and mix with fingers or a fork until coarse crumbs form.
  7. Pour the batter into the prepared loaf pan and spread evenly. Sprinkle the streusel over the top, pressing gently.
  8. Bake on the middle rack for 55-65 minutes. Check at 55 minutes with a toothpick; it should come out clean or with a few moist crumbs. If browning too fast, tent with foil after 40 minutes.
  9. Cool in the pan for 15 minutes, then lift out using parchment handles and transfer to a cooling rack. Cool completely before slicing (about 1 hour).

Notes

For best flavor, use overripe bananas with brown spots. Brown the butter carefully to avoid burning. Measure flour by spooning and leveling. Room temperature eggs incorporate better. Check doneness early to prevent overbaking.
