  • 1 cup (240 ml) heavy whipping cream, cold
  • 1/2 cup (120 g) store-bought lemon curd
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 1520 graham crackers or digestive biscuits
  • 2 cups (300 g) fresh blueberries, washed and patted dry
  • Optional garnishes: fresh mint leaves, extra lemon zest

Instructions

  1. Chill your mixing bowl and beaters in the fridge for 10-15 minutes.
  2. Pour cold heavy whipping cream into the chilled bowl and beat on medium-high speed until it starts to thicken.
  3. Add powdered sugar and vanilla extract, continue whipping until stiff peaks form (3-5 minutes).
  4. Gently fold lemon curd into the whipped cream until smooth and pale yellow.
  5. Line an 8×8-inch (20×20 cm) glass pan with parchment paper or lightly grease it.
  6. Layer graham crackers to cover the bottom of the pan.
  7. Spread one-third of the lemon cream evenly over the crackers.
  8. Sprinkle about 2/3 cup (100 g) fresh blueberries over the cream.
  9. Repeat layering with graham crackers, lemon cream, and blueberries two more times, finishing with lemon cream on top.
  10. Garnish with extra blueberries, lemon zest, and fresh mint leaves if desired.
  11. Cover the pan tightly with plastic wrap and refrigerate for at least 4 hours or overnight.
  12. Slice into squares and serve chilled. Use a sharp knife dipped in hot water for clean cuts.

Chill the mixing bowl and beaters before whipping cream for better results. Use fresh blueberries to avoid soggy layers. For a moister cake, brush lemon juice or simple syrup between layers. Avoid freezing to maintain texture. Let cake sit at room temperature for 10 minutes before slicing if refrigerated for a long time.
